Watermelon Salad

 

This is a super quick and easy salad; use a pre-chilled watermelon to make this salad even more refreshing on a hot summer afternoon or evening.

 

Cut half a large watermelon into bite sized cubes; around 4 cups total

Chop ½ a red torpedo onion, or more if you love onion

Dice enough basil to make ½-¾ cup (or use a lesser amount of mint)

Cube 4-5 oz feta cheese

 

Combine in a large bowl and toss with a dressing of:

    3 tbsp olive oil

    1 tbsp balsamic vinegar

    1 tsp honey or sugar

    Heavy pinch of salt

 

I prefer to serve this salad right after making it otherwise the onion taste becomes a little strong.
