Vinegared Cucumber Salad

 

Peel 1 large cucumber, or alternate between peeled and unpeeled strips.  Slice in half lengthwise and scoop out and seeds if necessary.  Thinly slice halves and mix in a small bowl with:

¼ cup rice vinegar or white wine vinegar

2 tsp sugar (honey may work but I find the taste too strong for the cukes and light vinegar)

Chopped dill, or even toasted sesame seeds

Pinch of salt

 

Let sit in the fridge for at least an hour before serving.

 

Goes great alongside a light summer meal.
